Peppermint Makes Everything Better

I would venture to guess that you either love peppermint or hate it. There are not many in-betweeners, I have found.  I always carry something made of peppermint in my purse. I believe a little "Peppermint makes everything better."  A peppermint candy puts a smile on a child's face, a peppermint breath mint is refreshing, peppermint gum cleans your breath and teeth, fresh peppermint leaves smell earthy and heavenly all at the same time.

For those of us with chronic migraines, peppermint does so much more. Peppermint essential oils, help to relax our brain and give us energy. Peppermint oils on our temples, give some symptom relief. For me, when a migraine is so intense that I ache from my head to my toes, I put a couple dabs of peppermint oil on my feet.

My new favorite for migraine symptom relief is peppermint tea. I've learned in the last year or so that ginger root gives me a migraine if I don't already have one and increases a migraines' intensity for me. So the ginger root that helps so many people with nausea symptoms does just the opposite for me. The nausea and stomach pains that always comes with a migraine for me would only subside for a couple hours with a dissolvable tablet. I would drink a cup of hot peppermint tea at night before bed to relax me enough to put me to sleep.

Two weeks ago I had an ingenious idea to make peppermint sun tea. You know...the tea of the south. We fill a huge mason-type jar with water, add a few tea bags with their string tabs hanging over the sides of the jar, close the lid tight and let the tea steep in the sun for a few hours. After that, just put the jar in the refrigerator for a couple hours to cool and drink at your leisure.

Oh my goodness. This peppermint tea is amazing! I drink it all day long. (Without sugar of course.) I have noticed that I am drinking more fluids throughout the day because I enjoy the peppermint tea more than plain water. I feel like I have more energy and I am not nauseous at all during the day. I like the tea strength a little lighter than my hot tea. So only 4 tea bags to a two and a half liter container.

For those of you who are gluten-free along with me, I am hoping this simple idea will give you some tummy relief as well. All natural, no additives. Just peppermint and water. Let me know how it works when you try it. I would love to hear your thoughts and success stories.

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. Gluten-Free Family Casseroles

Over the last 8 months, I had come to realize that casseroles were off limits for we gluten-free eaters. Most casseroles contain some type of crackers, bread crumbs or soup that contains gluten as a base to keep the casserole consistency and coherence adding tasty flavor in the process. My husband, in a constant search of foods that I will like or eat, came across a recipe book called, of all things, Casseroles. Many of the recipes in the book call for gluten ingredients, tortillas, corn bread mix, cream of chicken soup, etc. Combing through the book he found a few casserole recipes that ask for Tator Tots. Clearly not a sophisticated ingredient, but a tasty one non-the-less. We tried this recipe last night. It is definitely a naughty dish because it is delicious. We decided to use an already made chili, but our next attempt at the recipe will be with homemade chili. Chili Tots 1lb ground beef             1. Cook ground beef until no longer pink. Gluten-Free Organic Snacking

I love to snack. Ha ha ha ha. It's an uphill climb. I love to snack. It makes me a merrier me. (Sing to the tune of "I love to laugh" from the movie Merry Poppins) I also love pretzels. My fav is pretzels dipped in salsa. Yummy. I could almost eat an entire bag at a time. I found these amazing pretzels from Glutino. Gluten-free, egg-free, milk-free, casein-free. Completely delicious. Salty, crunchy. I ate an entire half bag today. I have eaten 3 bags in 3 weeks. One for each week I have been gluten-free. My husband has decided he loves them too and so do my folks. So much so we had to have 3 bags at the house just in case we feel like snacking. There is a new yogurt out that is a dip. My fav is cucumber and dill. So yummy on those amazing Glutino Pretzels. I am also digging grapes. My new fav fruit snack. Here's the kicker. I went to Fort Wayne, Indiana. Ft.
