GF Taco Salad, A Family Favorite

Wha What?  Gluten-Free Taco Salad!

I bet you don't believe me. In the last year there have been so many food production companies that have jumped on the GF, non-GMO band wagon. It makes me so happy. I truly feel that my problem with gluten comes from my own personal hormone issues related to thyroid and having genetically modified food does not help my body at all.

This recipe has been one of our family favorites for probably over 30 years! It is a true classic and now I can enjoy it how it was meant to be enjoyed. Great for a meal, parties, side dish etc.

Thank you Kroger for your GF, GMO Tortilla chips that taste like the brand name chips. Kroger, You are my tortilla-heroes!



This is my Mama's Taco Salad recipe adapted to my family's specialized tastes.

Ingredients
3 Roman Lettuce, cut into bite-sized pieces.
1 small package of cherry tomatoes cut in half.
8 oz of shredded Colby Jack cheese.
1 lb hamburger, browned, and prepared with Taco Seasoning of your choice. (We use Gluten-Free El Paso brand because that is the only GF brand we have found at our grocery.)
1 can of kidney beans, dark or light red is fine Rinse beans and then rinse again.
1 tblsp of dried onions.
1 package Spicy Hidden Valley Ranch mixed and prepared 1/2 hour in advance to cool in refrigerator.
1 or 2 bags of Kroger Spicy Nacho Cheese GF & GMO free.
1 very large Tupperware Salad bowl with a seal-able lid.

Preparation
Layer ingredients in the following order.
Lettuce
Tomatoes
Cheese
Hamburger
Onion Powder
Kidney Beans

Cool in Refrigerator for a hour or so.
Mix in Spicy Hidden Valley Ranch Dressing and crushed GF Kroger Nachos to taste.

Since the first day I started gluten-free. I have notice my food is digesting immediately. My system is also making much more noise. LOL. I am a little afraid to eat in public. Sugar Cravings, Detox and More

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. I will only eat vegies or fruit, and drink coffee, tea or water. My fav foods are vegies and fruit. I know I need protein so I eat it, but if I didn't have to I wouldn't eat it everyday. Flavorful, Spicy Tacos your whole Family will Love

After years of trying to eat together as a GF family, my husband and I sometimes get it right. He decided to make tacos and looked for GF ingredients for me. He ended up finding products that we both love together. This is definitely a keeper recipe. We recommend you change the spice level for younger children. Teenagers will love this because it is like Doritos and a little edgy.
