GF Taco Salad, A Family Favorite

Wha What?  Gluten-Free Taco Salad!

I bet you don't believe me. In the last year there have been so many food production companies that have jumped on the GF, non-GMO band wagon. It makes me so happy. I truly feel that my problem with gluten comes from my own personal hormone issues related to thyroid and having genetically modified food does not help my body at all.

This recipe has been one of our family favorites for probably over 30 years! It is a true classic and now I can enjoy it how it was meant to be enjoyed. Great for a meal, parties, side dish etc.

Thank you Kroger for your GF, GMO Tortilla chips that taste like the brand name chips. Kroger, You are my tortilla-heroes!



This is my Mama's Taco Salad recipe adapted to my family's specialized tastes.

Ingredients
3 Roman Lettuce, cut into bite-sized pieces.
1 small package of cherry tomatoes cut in half.
8 oz of shredded Colby Jack cheese.
1 lb hamburger, browned, and prepared with Taco Seasoning of your choice. (We use Gluten-Free El Paso brand because that is the only GF brand we have found at our grocery.)
1 can of kidney beans, dark or light red is fine Rinse beans and then rinse again.
1 tblsp of dried onions.
1 package Spicy Hidden Valley Ranch mixed and prepared 1/2 hour in advance to cool in refrigerator.
1 or 2 bags of Kroger Spicy Nacho Cheese GF & GMO free.
1 very large Tupperware Salad bowl with a seal-able lid.

Preparation
Layer ingredients in the following order.
Lettuce
Tomatoes
Cheese
Hamburger
Onion Powder
Kidney Beans

Cool in Refrigerator for a hour or so.
Mix in Spicy Hidden Valley Ranch Dressing and crushed GF Kroger Nachos to taste.

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. Gluten-Free Family Casseroles

Over the last 8 months, I had come to realize that casseroles were off limits for we gluten-free eaters. Most casseroles contain some type of crackers, bread crumbs or soup that contains gluten as a base to keep the casserole consistency and coherence adding tasty flavor in the process. My husband, in a constant search of foods that I will like or eat, came across a recipe book called, of all things, Casseroles. Many of the recipes in the book call for gluten ingredients, tortillas, corn bread mix, cream of chicken soup, etc. Combing through the book he found a few casserole recipes that ask for Tator Tots. Clearly not a sophisticated ingredient, but a tasty one non-the-less. We tried this recipe last night. It is definitely a naughty dish because it is delicious. We decided to use an already made chili, but our next attempt at the recipe will be with homemade chili. Chili Tots 1lb ground beef             1. Cook ground beef until no longer pink. Gluten-Free Organic Snacking

I love to snack. Ha ha ha ha. It's an uphill climb. I love to snack. It makes me a merrier me. (Sing to the tune of "I love to laugh" from the movie Merry Poppins) I also love pretzels. My fav is pretzels dipped in salsa. Yummy. I could almost eat an entire bag at a time. I found these amazing pretzels from Glutino. Gluten-free, egg-free, milk-free, casein-free. Completely delicious. Salty, crunchy. I ate an entire half bag today. I have eaten 3 bags in 3 weeks. One for each week I have been gluten-free. My husband has decided he loves them too and so do my folks. So much so we had to have 3 bags at the house just in case we feel like snacking. There is a new yogurt out that is a dip. My fav is cucumber and dill. So yummy on those amazing Glutino Pretzels. I am also digging grapes. My new fav fruit snack. Here's the kicker. I went to Fort Wayne, Indiana. Ft. Wayne is known to be a product and advertising test market because of it's Americana demographic
