GF, Low Calorie, Healthy, Homemade Chicken Cordon Bleu

I know. The title sounds like an oxymoron. Chicken Cordon Bleu is full of cheese and butter and fat. We love it so much here that we adapted a home recipe that gives you the delicious taste of the classic dish, but with a gluten-free healthy flair.

Ingredients:

1. Thin sliced chicken breasts. (We used Perdue brand.)
2. Thin sliced ham. (Flavor of your choice. We used smoked ham, but we have used Black Forest ham and that is good too.)
3. Thin sliced swiss cheese. (We like Sargento's brand or Boar's head from the deli.)
4. 1 stick of butter melted. (You will not use all of it.)
5. Corn flake crumbs. (Easier and cheaper than making them yourself and of course gluten-free. We found we like these even better than panko bread crumbs we used to use.)
6. Seasonings: Salt and pepper are the most delicious. You can also use garlic and/or paprika.

Prepare on wax paper.
1. Layer, one slice of thin chicken, then thin ham, then thin cheese.
2. Roll up like a fruit roll up. Secure with a couple toothpicks pushed through.
3. Roll in melted butter.
4. Roll in corn flakes until completely coated.
Place in an oven-safe glass pan.
Repeat for as many as you would like. We usually make 4 since there is just the 2 of us.

Bake at 400 degrees for 25-30 minutes max. Because the chicken is so thin, you do not want to overcook it. Each prepared piece is around 300 calories max.
My guess is that you could prepare these on the grill too as long as you turned them like a hotdog and used tin foil over the grill.

Sugar Cravings, Detox and More

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. I will only eat vegies or fruit, and drink coffee, tea or water. My fav foods are vegies and fruit. I know I need protein so I eat it, but if I didn't have to I wouldn't eat it everyday. After years of trying to eat together as a GF family, my husband and I sometimes get it right. He decided to make tacos and looked for GF ingredients for me.
