Man-O-Man Super Easy Chicken Chili

Scientists are learning there is correlation between thyroid issues, gluten sensitvities, food sensitivities and headaches.

I talk to several people each week that share with me either they have thyroid issues, headaches issues or a relative that has these health concerns. We seem to still be far from an answer for all the issues for all people because we are all so different. I am happy to be on this journey with them and you and always welcome new feedback an ideas.

I am always a little sceptical when someone tells me..."Oh...do I have a gluten free bread recipe for you. It is awesome." And we try it...and it is not so awesome. I am always willing to try. We had a few recipe suggestions this week and they are on our list to try in the future.

This week we stayed with our tried and true products. Glutino Preztels, potatoes and wild rice.
We made a new Chicken Chili recipe.

This Chicken Chili is simple and amazing because you can make it to taste in 15 minutes.
Chicken Breast 1 per person eating w/you           1. Cook chicken fully in frying pan with
Gluten Free canned white beans 1 can per person     a little olive oil. Cut in small pieces.
1-2 Green Peppers chopped.                                  2. Combine all products and cook til hot.
Onion (optional)                                                  
Season to taste.

Some headache books will tell you that onion can be a headache trigger for some people.
We added a little jalepeno juice to add some heat. We also added a few concentric circles of Sriracha sauce on the top. It makes the dish beautiful and tasty. Soooo good I said outloud, "Man-O-Man".

Can't beat the simple dishes.

Since the first day I started gluten-free. I have notice my food is digesting immediately. My system is also making much more noise. LOL. I am a little afraid to eat in public. I thought maybe it was just because I was eating so many grapes. I have found it is after every meal for about a half hour. The neat thing about this immediate digestion is that my stomach area is not bloated all day like it used to be. I do notice tummy bloat if I eat just a little bit of gluten on accident. For example, you would think beef jerky would be gluten free. apparently not. I ate a little. It tasted delicious. I didn't realize it had any gluten. The next morning I woke up with a funny taste in my mouth and a bloated tummy all day long. I didn't put two and two together until I read the back of the beef jerky packaging. Warning: Contains wheat and soy. My PA (Physician's Assistant) says my headaches will often get worse with major nausea. I am hoping the gluten free...

Ketogenic diet

In my search for Health-a-licious foods, (delicious foods that lead to good health). I often have conversations that lead to interesting new ideas and theories. I have recently given up caffeine...again...to see if that makes a difference in my racing heart rate (could just be that my thyroid effects it)...So to get to the point,  I was sitting in a Starbucks drinking my caffeine-free, sugar-free tea and eating my fat filled, gluten-filled, teeny-tiny breakfast sandwich. The conversation lead to health and food. My friend brought up a Ketogenic diet. http://en.wikipedia.org/wiki/Ketogenic_diet It is an amazing theory based on science and things we have heard before with the Atkins diet or the South Beach diet, but with a twist. It is high fat, low protein, low carbohydrate. The theory being that it  helps people who suffer from seizures to not suffer from seizures. I wish I would have know this last week. (My sister's beloved family pet just passed away from health issue...

Sugar Cravings, Detox and More

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. I will only eat vegies or fruit, and drink coffee, tea or water. My fav foods are vegies and fruit. I know I need protein so I eat it, but if I didn't have to I wouldn't eat it everyday. I love, vegies, fruit and desert. In fact one of my fav meals is a huge vegie plate and a pint of Hagen Daaz Gelato. So...I decided to do a detox while my hubby was out of town. $72.00 for what I felt was 4 days worth of fruits and vegetables. I did the detox. Only water, coffee or tea. Only vegetables or fruits. No sauces, no sugars, no condiments except herbs and spices. Every day about 3p, I started getting a headache. I would eat a piece of fruit. That wouldn't help. I decided after those 3 days that I am addicted to sugar. So I am now working my way to be sugar free with the exception of fruits. The holidays are proving challenging because of f...
