Over the last 8 months, I had come to realize that casseroles were off limits for we gluten-free eaters. Most casseroles contain some type of crackers, bread crumbs or soup that contains gluten as a base to keep the casserole consistency and coherence adding tasty flavor in the process.
My husband, in a constant search of foods that I will like or eat, came across a recipe book called, of all things, Casseroles. Many of the recipes in the book call for gluten ingredients, tortillas, corn bread mix, cream of chicken soup, etc.
Combing through the book he found a few casserole recipes that ask for Tator Tots. Clearly not a sophisticated ingredient, but a tasty one non-the-less.
We tried this recipe last night. It is definitely a naughty dish because it is delicious. We decided to use an already made chili, but our next attempt at the recipe will be with homemade chili.
Chili Tots
1lb ground beef 1. Cook ground beef until no longer pink. Drain.
30 oz of chili 2. Add chili, tomato sauce, black olives and green chilies.
8oz of tomato sauce 3.Sprinkle with cheese and top with Tatar Tots.
3oz black olives 4. Cover and bake at 350 degrees for 35-40 minutes.
4oz green chilies 5. For crispy Tots, broil for an additional 4 minutes.
8oz shredded cheddar cheese
32oz frozen Tatar Tots
You can freeze this casserole before cooking for up to 3 months. Easy breezy for moms and families with a busy schedule. It serves at least 8, maybe more, because the servings are huge.
We used a 9x13 pan, but you can also use 2 smaller pans, cook one and freeze the other.
We also layered the Tatar Tots evenly on top. The recipe called for piling the Tots on the top of the chili mixture. To cut back on calories we decided to layer. Just as delicious and probably crisper Tots.
Oh..last note: We love things extra hot, so we added a hot sauce as a condiment on top after it was cooked. I added Taco Bell hot sauce on mine and my husband used Tabasco. Both equally delicious. I hope you have as much fun with this recipe as we did.
