Fell off the Gluten Free Wagon and Then Back On

This is my journey of on and off the wagon this week. Weird roller coaster ride.

Off the Gluten Free Wagon
1, Uh oh..thought I would try a frozen pizza two Friday's ago. Simple easy. An hour later...headache. No fun. I was hoping it would not be like the ginger ale incident and have a headache for 8 hours. I went to bed hoping that when the food is out of my system, the headache will be gone too.

2. I was on the go-go-go with family.  From family in town for one day to hospital visit and multiple hospice visits. No time to stop and eat a sensible meal. I tried a hamburger and fries on different days. I ate as little of the bun as possible and did not have any "gut" reaction or headache response. I thought...good, but odd. Always keeping in mind I am trying to find the food answer to health.

1. On another day I ate some "Gluten-Free" labeled brown rice seasoned chips. Just because I felt like it. These are labeled with everything the food movement is talking about; Gluten Free, Wheat Free, Organic, No GMO, Whole Grain and Vegan. According to all sources these chips should be the healthiest food on the planet. I didn't think twice of eating two servings because it was labeled with all the things I wanted in a chip. It does have a huge list of ingredients. The chips tasted amazing while I was eatting them. It was like a party on your tongue.



OH MY GOODNESS. My body had a crazy reaction.Tummy hurt within 10 minutes and I had bad taste in my mouth from evening through the morning. Couldn't brush it out. Couldn't floss it out. Couldn't tongue clean it off. Sooooo gross.

2. Yesterday I ate a boxed sandwich with gluten free bread. We were at an all day conference for my independent business and some lovely person who ordered the boxes thought of those GF and Vegan people. I didn't quite trust it..so I didn't eat the bread, but I did eat the potato chips. The ingredients were simple. Potatoes, vegetable oil, salt. I had no physical reaction except...YUMMY.

So my health-a-licious experiment so far is leading me to believe that I may not have a gluten sensitivity, but a spice sensitivity. Or a processed food sensitivity. There are not many spices in hamburger buns and probably only a few ingredients in creating them, but many steps in processing for pizza and spicy seasoned chips. My homemade GF pizza a few weeks ago was amazing with no physical reaction. Interesting.

I will not stop the gluten-free experiment, but may try to add in a couple of my favorite foods that over the years, I have felt are healthy. Like whole grain wheat cereal, homemade bread. Not many spices in those recipes. In fact, just yeast and salt. Leaning towards everything homemade and earth fresh.

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. Gluten-Free Family Casseroles

Over the last 8 months, I had come to realize that casseroles were off limits for we gluten-free eaters. Most casseroles contain some type of crackers, bread crumbs or soup that contains gluten as a base to keep the casserole consistency and coherence adding tasty flavor in the process. My husband, in a constant search of foods that I will like or eat, came across a recipe book called, of all things, Casseroles. Many of the recipes in the book call for gluten ingredients, tortillas, corn bread mix, cream of chicken soup, etc. Combing through the book he found a few casserole recipes that ask for Tator Tots. Clearly not a sophisticated ingredient, but a tasty one non-the-less. We tried this recipe last night. It is definitely a naughty dish because it is delicious. Gluten-Free Organic Snacking

I love to snack. Ha ha ha ha. It's an uphill climb. I love to snack. It makes me a merrier me. (Sing to the tune of "I love to laugh" from the movie Merry Poppins) I also love pretzels. My fav is pretzels dipped in salsa. Yummy. I could almost eat an entire bag at a time. I found these amazing pretzels from Glutino. Gluten-free, egg-free, milk-free, casein-free. Completely delicious. Salty, crunchy. I ate an entire half bag today. I have eaten 3 bags in 3 weeks. One for each week I have been gluten-free. My husband has decided he loves them too and so do my folks. So much so we had to have 3 bags at the house just in case we feel like snacking. There is a new yogurt out that is a dip. My fav is cucumber and dill. So yummy on those amazing Glutino Pretzels. I am also digging grapes. My new fav fruit snack. Here's the kicker. I went to Fort Wayne, Indiana. Ft. Wayne is known to be a product and advertising test market because of it's Americana demographic...
