It's a Festivus Miracle!

Yes, yes...I made a Seinfeld reference. LOL. Festivus for the rest of us. It is a fictional holiday in which family members get together one time a year, share their grievances with or about each other and then physically wrestle each other. The winner gets the family trophy or "pole" as in the TV program. If you have not seen this episode of the Seinfeld sitcom, it is a must.

For the last 7 years at least four times a year I have a Festivus conversation with my health care professionals. All different types of professionals. Homeopaths, chiropractors, acupuncturists, herbalists, massage therapists, fertility specialists, surgeons, physicians, nurses assistants, physicians assistants, ex-ray techs, phlebotomists, etc. You name it...they have heard my Festivus conversation about my body. My gazillion complaints about how bad my body treats me.

My  complaints have been many, from gaining weight for no reason to losing weight for no reason, from headaches that are monthly that moved to by-monthly to daily. From dizzy-ness to emotion-less and emotion-filled. From back aches to neck aches to a pain in my foot for years. We have talked about those and many more that would be too long to list here.

Now, those who know me...I don't mind telling you what is going on with me. I think it lets people know that we are all human and we all have some kind of stuggle and it brings us closer. My philosphy has been, "Nothing starts till it gets personal".  Complaints or "Festivus" with my body, I leave to the health care professionals. That is where I complain. That is where I whine. That is where I cry. I figure they have seen it all, they can take it. They can wrestle with my Festivus complaints and win and I will gladly give them the trophy.

So now I am inviting sereral professionals to my health care Festivus this season and so far this multiple effect seems to be working. There are several options we came up with starting with one at a time. A simple, gentle was to attack the problems and multiple complaints.

So for 6 weeks we have adjusted a synthroid I have been taking for years that my body decided it needed to change and not accept the current dosage. Those with no thyroid and/or thryoid cancer need a different end number in their blood work than those who a funtioning thyroid even if it is partially functioning.

They also decided to add another hormone, a low does progeseterone pill. I took it one night and woke up feeling refeshed. That is the first time I have felt like I have slept in years. A Festivus Miracle!  I can't wait to see what other solutions these healtcare professionals come us with wrestling my bodily complaints at the Festivus table.

Next week...more about my gluten free and food journey. Some breakthroughs are happening.

Have a Happy Healthy Day.

The December Adventure to Find a Delicious & Simple Gluten-Free Bread Recipe

Oh my goodness. I have tried a GF bread mix, GF flour, a mix of GF flour and rice flour all...yuck. Still the best GF bread recipe I have is cornbread. In fact, last week we turned it into a jalapeno cornbread. Now we are going to try a jalapeno & cheese cornbread. Amazing!! Add some beans on top and some GF chicken broth on top. Yummy. The Adventure 1. The GF recipe said, put all the dough in ONE bread pan and let rise to the rim and bake. Since I have baked homemade bread in the past, I thought, "Hmm. This sure is alot of dough for only one bread pan." And...it was. As it baked, it rose five inches above the bread pan itself. It browned on the outside and cooked the appropriate time, I took it out and it was not cooked on the inside. I laid it on a cooling rack like instructed, the bread collapsed. Very bizarre. I think the directions on the GF bread back need to be changed. LOL 2. I took an old recipe from my Grandfather and adapted it, adding GF baking flour an...

Make Ahead & Freeze Gluten Free Recipes.

After 8 months of gluten free eating my husband is on board to cook gluten free meals for me. He is an amazing cook. He is creative, follows the recipe and adds his own flair to make the recipe all his own. He even came in 2nd at a huge chili cook off at our church. He has created two new home recipes for me. Both are make ahead recipes. Both are freezable. In our household we like to cook twice a week. Enough to be evening staple meals for two or three days. With only two of us it makes it easier than most families of 4 or more. With these new freezable recipes we have been trying, we can cook on Sunday and have meals for a month if we choose. These recipes can stay in the freezer for up to 3 months. Pizza Tot Casserole 1 1/2lbs ground beef                                     ...
