No More Ginger

For those of you keeping score...I no longer drink ginger ale. I have not drank ginger ale in a long time. Yesterday I openned a bottle I brought home from the grocery two weeks ago. I poured the refreshing looking ginger ale over ice and drank a cup.

An hour later I poured another cup. I swallowed wrong ( or so I thought) and started coughing. I coughed for 5 minutes. My throat hurt and my face got all red.

So 3 hours later I was slammed with a headache.  Could  it be that I coughed myself into a headache or because ginger has been an ingredient I have been sensitive too and did not know it?
I have always had an aversion to raw ginger smell. Maybe that was my body's way of telling me, "Don't eat it."

I had weird throat and chest pain. As the night progressed and my system process the ginger ale, the burning went from my chest to my stomach to my intestines. I don't know if it is because I have gone gluten-free and the ginger ale is bothering me now or because I have always been sensitive to ginger and did not know it.

Today I am headache free. Further proof to me that the ginger ale was the problem.
Here we go on this journey. I must say YIKES and...dang.

The December Adventure to Find a Delicious & Simple Gluten-Free Bread Recipe

Oh my goodness. I have tried a GF bread mix, GF flour, a mix of GF flour and rice flour all...yuck. Still the best GF bread recipe I have is cornbread. In fact, last week we turned it into a jalapeno cornbread. Now we are going to try a jalapeno & cheese cornbread. Amazing!! Add some beans on top and some GF chicken broth on top. Yummy. The Adventure 1. The GF recipe said, put all the dough in ONE bread pan and let rise to the rim and bake. Since I have baked homemade bread in the past, I thought, "Hmm. This sure is alot of dough for only one bread pan." And...it was. As it baked, it rose five inches above the bread pan itself. It browned on the outside and cooked the appropriate time, I took it out and it was not cooked on the inside. I laid it on a cooling rack like instructed, the bread collapsed. Very bizarre. I always taste the cookie dough? Do you? I know we are not supposed to because of the raw eggs, but I have been eating cookie dough since I was a kid. The dough is an indication to me of how the cookies will taste once they are baked. GF dough is an especially sensitive indicator of how cookies will taste after baking.
