Fresh Salads: My Favorite Time of Year

     I have always loved fresh fruits and vegetables. I can't remember a time when fresh, was not important to me. I remember when my sister and I were young, we would help our grandfather and mother pick green beans fresh from his garden. We were allowed to eat as many as we wanted right then and there. We picked rhubarb from the neighbors back yard and ate it while we stood there. I don't even know if we were allowed to. When you are little, you often don't know the asking etiquette yet, especially when it comes to food you love. My mother grew fresh mint in the back yard. It was wild mint and we would pick a leaf, put it in our mouth, or maybe two or three leaves and just suck on them. We picked apples from the tree in the backyard too and mom made fresh apple butter. So delicious that I would eat it like ice cream straight from the jar.

    There is no match for an in-season vegetable or fruit compared to a hot house vegetable or fruit. My new favorite salad recipe is something that may sound crazy, but it is really good. I took two of my favorite summer salad and combined ingredients and then added a healthier drizzle of dressing. Spinach, Strawberry, Bacon and Egg Salad. It is just like it sounds. As much of all of the ingredients that you want. We use the mix below:

1 bag of Baby Spinach, Baby Kale, Baby Bok Choy - Publix brand from the organic selection.
3 cups of sliced fresh picked strawberries.
1 lb Nitrate-free bacon. (We end up using a 1/2 pound because we eat the rest. LOL)
6 Hard-boiled eggs.

   I make a simple dressing recipe like my mom does with some of the bacon grease. (So bad for you, but tastes so good.) And I add vinegar to taste. We do not drizzle the dressing on the salad because at my house everyone likes a different amount of dressing on their salads.

Simple, fresh, gluten and nitrate free. farm to table. So yummers. Enjoy.

  1. That sounds yummy! We also like bacon lettuce tomato & fresh mushrooms with or without eggs & then the same sweet sour bacon dressing. I only use a couple of tbls of bacon grease, just enough for flavor & to make it cling, so not too bad.

Gluten-Free Organic Snacking

I love to snack. Ha ha ha ha. It's an uphill climb. I love to snack. It makes me a merrier me. (Sing to the tune of "I love to laugh" from the movie Merry Poppins) I also love pretzels. My fav is pretzels dipped in salsa. Yummy. I could almost eat an entire bag at a time. I found these amazing pretzels from Glutino. Gluten-free, egg-free, milk-free, casein-free. Completely delicious. Salty, crunchy. I ate an entire half bag today. I have eaten 3 bags in 3 weeks. One for each week I have been gluten-free. My husband has decided he loves them too and so do my folks. So much so we had to have 3 bags at the house just in case we feel like snacking. There is a new yogurt out that is a dip. My fav is cucumber and dill. So yummy on those amazing Glutino Pretzels. I am also digging grapes. My new fav fruit snack. Here's the kicker. I went to Fort Wayne, Indiana. Ft. Digestion being Gluten-FreeFollow my blog with Bloglovin

Since the first day I started gluten-free. I have notice my food is digesting immediately. My system is also making much more noise. LOL. I am a little afraid to eat in public. I thought maybe it was just because I was eating so many grapes. I have found it is after every meal for about a half hour. The neat thing about this immediate digestion is that my stomach area is not bloated all day like it used to be. I do notice tummy bloat if I eat just a little bit of gluten on accident. For example, you would think beef jerky would be gluten free. apparently not. I ate a little. It tasted delicious. I didn't realize it had any gluten. The next morning I woke up with a funny taste in my mouth and a bloated tummy all day long. I didn't put two and two together until I read the back of the beef jerky packaging. Warning: Contains wheat and soy. My PA (Physician's Assistant) says my headaches will often get worse with major nausea. I am hoping the gluten free...
