Chicken Fried Chicken?

I know, crazy right? My country cookin' friends seem to think so too. I, on the other hand think it is a great idea.

Most southern cooks talk about chicken fried steak or chicken fried pork. Well, why not chicken fried chicken?  No bone, no dark meat less grease. Sounds good to me. Since my mom is an amazing cook and doesn't shy away from any recipe, I thought I can do it too.

So even with the mocking from others I tried it. Turned out great. The kitchen smelled like home cookin at it's finest.

I will tweek the breading recipe spices a a bit next time.

My Chicken Fried Chicken Recipe

4 Chicken Cutlets

1/2 cup GF cornmeal
1/2 cup grated GF cornflake cereal
1/2 tsp garlic
1 tsp onion powder
1/2 tsp red crushed pepper
1/4 tsp black pepper
1 tsp salt

1/2 cup almond milk
1 large egg
Canola oil

Add milk and egg together in cereal size bowl. Mix well
Add all dry ingredients in cereal size bowl. Mix well.

Heat canola oil in large frying pan. About 1/4 inch in the bottom is good. Heat until it bubbles a bit.
Dip chicken cutlets into liquid mixture, coat well. Then dip cutlet in dry mixture. Coat well.
Put in frying pan. Fry for four minutes each side, until browned well.
Put on paper towel to soak up excess oil and let cool a bit before eating.

My two best critics, my Jack Russell Terriers couldn't wait to try a bite and both asked for seconds. Tee hee. Of course, a bite means little tiny piece. When I told them "all gone" they asked for their nighttime snack of peanut butter in their Kongs. So much for taste.

Have a Health-a-licious Day.

Ketogenic diet

In my search for Health-a-licious foods, (delicious foods that lead to good health). I often have conversations that lead to interesting new ideas and theories. I have recently given up caffeine...again...to see if that makes a difference in my racing heart rate (could just be that my thyroid effects it)...So to get to the point,  I was sitting in a Starbucks drinking my caffeine-free, sugar-free tea and eating my fat filled, gluten-filled, teeny-tiny breakfast sandwich. The conversation lead to health and food. My friend brought up a Ketogenic diet. http://en.wikipedia.org/wiki/Ketogenic_diet It is an amazing theory based on science and things we have heard before with the Atkins diet or the South Beach diet, but with a twist. It is high fat, low protein, low carbohydrate. The theory being that it  helps people who suffer from seizures to not suffer from seizures. I wish I would have know this last week. Make Ahead & Freeze Gluten Free Recipes.

After 8 months of gluten free eating my husband is on board to cook gluten free meals for me. He is an amazing cook. He is creative, follows the recipe and adds his own flair to make the recipe all his own. He even came in 2nd at a huge chili cook off at our church. He has created two new home recipes for me. Both are make ahead recipes. Both are freezable. In our household we like to cook twice a week. Enough to be evening staple meals for two or three days. With only two of us it makes it easier than most families of 4 or more. With these new freezable recipes we have been trying, we can cook on Sunday and have meals for a month if we choose. These recipes can stay in the freezer for up to 3 months. Pizza Tot Casserole 1 1/2lbs ground beef                                     ...

Digestion being Gluten-FreeFollow my blog with Bloglovin

Since the first day I started gluten-free. I have notice my food is digesting immediately. My system is also making much more noise. LOL. I am a little afraid to eat in public. I thought maybe it was just because I was eating so many grapes. I have found it is after every meal for about a half hour. The neat thing about this immediate digestion is that my stomach area is not bloated all day like it used to be. I do notice tummy bloat if I eat just a little bit of gluten on accident. For example, you would think beef jerky would be gluten free. apparently not. I ate a little. It tasted delicious. I didn't realize it had any gluten. The next morning I woke up with a funny taste in my mouth and a bloated tummy all day long. I didn't put two and two together until I read the back of the beef jerky packaging. Warning: Contains wheat and soy. My PA (Physician's Assistant) says my headaches will often get worse with major nausea. I am hoping the gluten free...
