Gluten-Free, Nitrate-Free Sausage Balls Big Game Day, Football, Holidays, etc.

I promised some delicious GF recipes and we have found some.
This one is an adaptation from the original recipe and may need just a smidge of adjusting but irregardless turned out to be a hit. They were so delicious and went so quickly that I forgot to take a picture.

Sausage Balls Original                                                  GF, NF Sausage Balls
1 lb ground sausage                                                       1 lb uncured ground sausage
1 lb shredded cheddar cheese                                        1 lb shredded mozzarella, american or velvetta
2 cups Bisquick Original Mix                                         2 cups GF Bisquick Mix
1/2 cup water                                                                 1/2 cup water

Mix all together in same bowl. Roll into teaspoon size balls. Place on cookie tin. You can use tin foil or parchment paper underneath. Bake at 350 degrees for 20 minutes or until desired crispness on bottom.

O-M-Goodness! Dairy-Free, Gluten-Free Chocolate Chip Cookie Pie (75% Sugar-Free)

This so sooo amazing! Of course, I had to tweek it to my dietary needs.  You are going to fall out of your chair at how easy and surprisingly delicious this is. Deep Dish Chocolate Chip Cookie Pie Dairy-Free -  Gluten-Free -  Sugar-Free -  High in fiber and protein -  Low in fat -  250 calories   Ingredients: 3 Cups of Prepared Garbanzo aka Chickpeas (Or 2 cans Garbanzos that have been drained and well rinsed. Ketogenic diet

In my search for Health-a-licious foods, (delicious foods that lead to good health). I often have conversations that lead to interesting new ideas and theories. I have recently given up caffeine...again...to see if that makes a difference in my racing heart rate (could just be that my thyroid effects it)...So to get to the point,  I was sitting in a Starbucks drinking my caffeine-free, sugar-free tea and eating my fat filled, gluten-filled, teeny-tiny breakfast sandwich. The conversation lead to health and food. It is high fat, low protein, low carbohydrate. The theory being that it  helps people who suffer from seizures to not suffer from seizures. I wish I would have know this last week.
