The December Adventure to Find a Delicious & Simple Gluten-Free Bread Recipe

Oh my goodness. I have tried a GF bread mix, GF flour, a mix of GF flour and rice flour all...yuck.

Still the best GF bread recipe I have is cornbread. In fact, last week we turned it into a jalapeno cornbread. Now we are going to try a jalapeno & cheese cornbread. Amazing!! Add some beans on top and some GF chicken broth on top. Yummy.

The Adventure
1. The GF recipe said, put all the dough in ONE bread pan and let rise to the rim and bake. Since I have baked homemade bread in the past, I thought, "Hmm. This sure is alot of dough for only one bread pan." And...it was. As it baked, it rose five inches above the bread pan itself. It browned on the outside and cooked the appropriate time, I took it out and it was not cooked on the inside. I laid it on a cooling rack like instructed, the bread collapsed. Very bizarre. I think the directions on the GF bread back need to be changed. LOL

2. I took an old recipe from my Grandfather and adapted it, adding GF baking flour and a little brown rice flour. I halved the recipe and put it in one bread pan. The dough did overflow when baking, but not too much. Whew. When the bread came out of the oven, it smelled great. It look lumpy and it crumbles upon cutting. it also does not taste so great.

So the adventure continues to find a simple GF bread recipe that is delicious.

Have a Happy Healthy Day.

Sugar Cravings, Detox and More

So my hubby was selected by his company to be a lead in a certain group which meant he would be traveling for 4 days. Perfect, I thought. I will only eat vegies or fruit, and drink coffee, tea or water. My fav foods are vegies and fruit. I know I need protein so I eat it, but if I didn't have to I wouldn't eat it everyday. I love, vegies, fruit and desert. In fact one of my fav meals is a huge vegie plate and a pint of Hagen Daaz Gelato. So...I decided to do a detox while my hubby was out of town. $72.00 for what I felt was 4 days worth of fruits and vegetables. I did the detox. Only water, coffee or tea. Only vegetables or fruits. No sauces, no sugars, no condiments except herbs and spices. Every day about 3p, I started getting a headache. I would eat a piece of fruit. That wouldn't help. I decided after those 3 days that I am addicted to sugar. So I am now working my way to be sugar free with the exception of fruits. The holidays are proving challenging because of f

Gluten-Free Family Casseroles

Over the last 8 months, I had come to realize that casseroles were off limits for we gluten-free eaters. Most casseroles contain some type of crackers, bread crumbs or soup that contains gluten as a base to keep the casserole consistency and coherence adding tasty flavor in the process. My husband, in a constant search of foods that I will like or eat, came across a recipe book called, of all things, Casseroles. Many of the recipes in the book call for gluten ingredients, tortillas, corn bread mix, cream of chicken soup, etc. Combing through the book he found a few casserole recipes that ask for Tator Tots. Clearly not a sophisticated ingredient, but a tasty one non-the-less. We tried this recipe last night. It is definitely a naughty dish because it is delicious. We decided to use an already made chili, but our next attempt at the recipe will be with homemade chili. Chili Tots 1lb ground beef             1. Cook ground beef until no longer pink. Drain. 30 oz of chili

Gluten-Free Organic Snacking

I love to snack. Ha ha ha ha. It's an uphill climb. I love to snack. It makes me a merrier me. (Sing to the tune of "I love to laugh" from the movie Merry Poppins) I also love pretzels. My fav is pretzels dipped in salsa. Yummy. I could almost eat an entire bag at a time. I found these amazing pretzels from Glutino. Gluten-free, egg-free, milk-free, casein-free. Completely delicious. Salty, crunchy. I ate an entire half bag today. I have eaten 3 bags in 3 weeks. One for each week I have been gluten-free. My husband has decided he loves them too and so do my folks. So much so we had to have 3 bags at the house just in case we feel like snacking. There is a new yogurt out that is a dip. My fav is cucumber and dill. So yummy on those amazing Glutino Pretzels. I am also digging grapes. My new fav fruit snack. Here's the kicker. I went to Fort Wayne, Indiana. Ft. Wayne is known to be a product and advertising test market because of it's Americana demographic
